Meat balls “koubeba” traditional recipe of Syros island

This is a recipe which is no longer cooked on the island

20 prunes

10 walnuts cut in half

1/2 kilo minced veal meat

2 egg yolks

1 cup walnuts and almonds chopped

half cup pine nuts

5 tablespoons of bread threshed

2 teaspoons juice from an onion

parsley

salt and pepper

2 tablespoons lemon juice

1 cup melted butter

1 glass white wine

1 glass of red wine

1 cup broth

 

Mix the minced meat, krokadia, salt, pepper, 2 tablespoons butter, bread, lemon juice and onion, walnuts, almonds, pine nuts and parsley. Knead the dough and shape into large meatballs. Place meatballs on a greased baking sheet , add some butter on each one and bake in the oven for about one quarter. Once browned, pour the wine and broth and allow to cook for about a quarter pouring over them their sauce. At the same time you have prepared plums as follows: you moisten them with some hot red wine, remove the seeds and in their place put half a walnut. Pour into the baking dish to cook a little and serve the meatballs with the prunes.
